Who doesn’t love taquitos? My family thoroughly enjoys them and this recipe makes them even better!
This recipe is a great, fast weeknight dinner, and one of the best parts is that the leftovers are just as good! I always try to make meals that have leftovers. We are a very busy family and not having to cook every night is very helpful.

Taquito-Enchilada Bake
This recipe is very simple and extremely tasty!
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Ingredients
- 1 (20 ounce) can of red enchilada sauce
- 1 (20 ounce) box of beef or chicken taquitos, partially thawed
- 1 1/2 cups shredded, Mexican blend cheese
- 1 (16 ounce) can of refried beans
- sour cream (optional)
Instructions
Preheat oven to 375⁰F
Pour 1/3 of the enchilada sauce into a lightly greased 11x7x2-inch baking dish. Arrange 1/2 of the taquitos over enchilada sauce. Evenly spread refried beans over taquitos (you can heat up the beans to make them spread easier).
Layer 1/3 more sauce and 1/2 of the shredded shredded cheese. Top with remaining taquitos and enchilada sauce.
Bake, covered, for 25 minutes or until heated through. The last 5 minutes of baking, top with remaining cheese.
Serve with sour cream if desired.
